Elk Roast Street Tacos
Elk Chuck Roast Ingredients
- 2 lb elk chuck roast
- 1/2 cup beef broth (or elk broth if you have it)
- 1 tbsp tomato paste
- 1 lime, juice from
Spices
- 1 tbsp chili powder
- 1/2 tbsp onion powder
- 2 tsp salt
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp pepper
- 1/2 tsp cayenne pepper (optional for heat)
- 1/2 tsp paprika
Instructions
1. Mix all spices together and rub all over chuck roast.
2. Place chuck roast in slow cooker.
3. Whisk together beef broth, lime juice and tomato paste. Pour over chuck roast.
4. Place lid on slow cooker and cook on low for 6-7 hours. (I like to go six hours and then add time by half hours until it falls apart)
5. When done shred and place on warmed tortilla with your favorite toppings. Enjoy!
